Mushrooms with kefalograviera cheese

A modern and delicius recipe

Ingredients (for 4-5 persons)

  • 500 gr of mushrooms (any kind you want)
  • 2 cups of milk
  • butter (small ammount)
  • 4 eggs
  • breadcrumbs
  • salt and pepper
  • paprika
  • grated nutmeg
  • 1 cup of grated kefalograviera cheese

Cooking instructions:

  • Wash the mushrooms (if very large, cut in two) and boil in salted water. Drain well. 
  • Butter a baking pan, sprinkle with breadcrumbs and spread through the mushrooms.
  • Boil the milk and let it cool a bit. Beat the eggs lightly and add salt, pepper, nutmeg and 3 / 4 of kefalograviera cheese.
  • Pour the mixture over the mushrooms, sprinkle with remaining cheese and pour over  small pieces of butter. Sprinkle with a little paprika. 
  • Put the baking pan in the oven (170oC) for about  half an hour (until golden brown surface).

Zucchini with kefalograviera


  • 1 pound zucchini
  •  4 eggs
  •  6 tablespoons breadcrumbs sharp
  •  250g. two ham slices, cut into cubes
  •  200gr. kefalograviera grated
  •  2 tablespoons margarine
  •  4 tablespoons cream - 1 cup milk
  •  Oil for frying
  •  Salt and freshly ground pepper

Cooking Instructions:

Wash zucchini, cut them in slices, light brown them in a pan with hot oil and let drain on absorbent paper.

Mix the milk with the cream. Beat the eggs and add to mixture along with pepper and stir to make a homogenous mush.

Brush with some melted margarine a fireproof dish, sprinkle with a tablespoon of bread crumbs, aradiaste the zucchini with ham, cheese (keep 3-4 tablespoons for the top) and 4 tablespoons of breadcrumbs. Pour the batter over the zucchini.

Sprinkle the rest kefalograviera, a tablespoon of bread crumbs and margarine in small pieces.

Bake in preheated oven at 200oC for 45 minutes, until surface gets golden brown and serve the food hot


Beef with kefalograviera

Just perfect!


  • 1 kg of beef
  • 4 potatoes
  • 4 carrots cut to small cubes
  • 1 can of chopped tomatoes (or fresh tomatoes and some tomato paste)
  • Oil
  • 1 cup peas
  • 300 grams kefalograviera salty sliced (I suggest Amfilochia)
  • 1 cinnamon stick
  • Salt, pepper, sugar

Cooking Instructions:

  • Cut the beef in bites, put the oil to burn and sauté.
  • Add tomatoes and let fry for a while.
  • Add water (and paste if we use fresh tomatoes) Salt and pepper, add a pinch of sugar and cinnamon.
  • Allow to cook until meat is done (if necessary add water) in total about four hours.
  • After 3 hours, add potatoes cut into small bites (as in grilled chicken) and carrots.
  • After another 30 min remove the cinnamon wood, add the peas and cook. Here is attention needed,,if the re is too much water let it boile before we put the peas in.
  • Once done, add it in a deep earthenware dish, cover with the kefalograviera cut into thin slices and place it in the oven until cheese melts.

Pie Gianniotiki with Kefalograviera

Traditional recipe!


  • 650 grams grated kefalograviera
  • 500 grams of milk
  • 3 eggs
  • Butter (to spreads the leaves)
  • 4 sheets puff pastry

Cooking Instructions:

  • Butter a baking pan, run a sheet and brush with butter.
  • Add a third of kefalotyri and cover with second sheet of buttered.
  • Continue with another 1 / 3 of the cheese and the third buttered sheet, ending with the third layer of cheese and the last buttered foil.
  • Beat eggs with milk and pour the pie.
  • Bake the pie in a moderate oven until golden brown.
