Penne with Pecorino-type cheese from Amfilochia

A recipe for quick and tasty food


  • 1 packet of  penne
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 300 gr. diced ham
  • 1 ¼ cup grated pecorino
  • 1 / 3 cup cream
  • 1 sachet saffron powder

Cooking Instructions:

Cook pasta as directed on the box. Keep 2 cups of the water the pennew were boiled.
While the pasta is boiling, heat the oil in a frying pan and saute the onion and ham for 8 minutes.
Add all the ingredients of the frying pan into the pot with the penne.
Sprinkle with salt, pepper, 1 cup grated Pecorino cheese, saffron, the cream and the water kept.
Keep boiling on high heat for 2 minutes while stirring. Serve sprinkled with the remaining pecorino.


Omelette with Pecorino-type cheese

An easy recipe, tasty and quick

Ingredients (4 people):

  • 5 eggs
  • Grated pecorino-type cheese
  • 1 dried chili pepper, seedless
  • 4 tsp. tablespoon olive oil
  • Salt

Cooking Instructions:

  • In a pan, fry the chili pepper in the oil, pour the oil into a bowl and let cool.
  • Pour the eggs into the oil, add the grated cheese, beat and pour the mixture into the hot pan that you have left oiled.
  • Fry the omelette on both sides and serve.

You can also make the omelet with fresh chili pepper (without seeds), cut in the shape of the ring which will cook with the omelet.
